Clevedon Farmhouse Salad

1 cos lettuce
Handful olives
10-12 small sun-ripened tomatoes, halved
One pack smoked beef
80-100g feta, cubed
Fresh herbs
3 hard-boiled eggs
Handful fresh green beans
Shallot or red onion, finely chopped (optional)
1 tbsp lemon juice
2 tbsp olive oil
1/8 tsp honey
Salt and pepper

Blanch the beans in boiling water for one minute, then plunge into cold water. Arrange the cos lettuce leaves on a large platter. Arrange the tomatoes, smoked beef, feta, torn fresh herbs, beans, olives and shallot or red onion (if using) on top.
Whisk together the lemon juice, olive oil, honey, salt and pepper, then drizzle over the salad. Serve immediately.
