Best-Ever Tomato Juice

2 1/2 cups peeled, very ripe tomatoes
1 onion or spring onion
3 fresh basil or mint leaves
1 tbsp olive oil
2 tsp white wine vinegar
1 tsp salt
1 tsp sugar
1/4 tsp pepper

Puree all ingredients and strain. Add 1/2 cup of water and chill. Juice can be frozen or bottled using the water bath method.
